You have to try these delicious lemon pepper chicken skewers! They're so easy and fresh, perfect for summer!
Lemon chicken skewers
1 lb chicken breast, cubed
Bell pepper
Red onion
Mushrooms
Grape tomatoes
Yellow squash
Zucchini
2 tbsp Feta
Marinade:
1 cup Greek yogurt
2 cloves garlic, minced
2 tbsp dijon mustard
1 tsp roasted garlic herb seasoning
1 tsp lemon pepper
1/4 tsp oregano
Juice of one lemon
Mix all ingredients for marinade, reserving 1/3 for dipping sauce. Marinate chicken at least 4 hours or overnight. Soak skewers in water for 30 mins (prevents burning). Assemble marinated chicken with veggies onto skewers. Season skewers with more lemon pepper. Grill or roast skewers at 375 until chicken is done, about 30 mins. Mix feta with reserved marinade. Serve with pita and sauce to dip. Enjoy!
