Sometimes we need a break. All of us. Life is busy and sometimes it's hard to find the time to make a dinner from complete scratch, and that's OKAY! I love green chili for dinner and have made LOTS of variations. This recipe works with fresh, frozen, canned or whatever kind of green chili you like or can find! Now give yourself a break for dinner, I know I will! Cheers!
Shortcut Green Chili:
2 lbs boneless skinless chicken thighs
1 yellow onion, diced
1/2 cup salsa verde
2 cups green chili (fresh, frozen, canned, WHATEV)
2 cloves garlic, minced
1/2 tsp garlic salt
1 tsp oregano
1 cup chicken stock
1 packet brown gravy
fresh cilantro and scallions for garnish
Tortillas & limes, for serving
Dice chicken into bite size pieces and add to large bowl. Season with garlic salt and oregano. Add 1-2 tbsp olive oil to a large dutch oven or stock pot over medium heat. Add seasoned chicken to pot, letting brown for about 3 minutes. Add diced onion and cook an additional 3-4 minutes or until soft. Add garlic, green chili, and salsa verde. Stir well. Add brown gravy packet and stir until completely dissolved. Cover and cook 10 minutes. Taste and adjust salt as needed. Serve with sour cream, cilantro, scallions, and warm tortillas. Enjoy!
