Easy Tex-Mex Skillet

I wanted to create something similar to enchiladas, but without having to roll or fry my tortillas beforehand to save me time (and calories). I truly believe that enchiladas should be blanched in hot oil before rolling to give them the perfect (not soggy) texture. I also wanted to just layer the tortillas, but didn't want to sacrifice texture or flavor. So, I put them on a cooling rack, sprayed them with some oil and crisped them up this way! This dinner was truly satisfying and was toddler approved!


Ingredients:

18 corn tortillas

1 yellow onion, diced

cooking spray

1/2 cup salsa verde

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup shredded monterey jack cheese

1 lb ground turkey (or beef)

1 pkg taco seasoning

1 (14.5oz) can red enchilada sauce

1 (14.5 oz) can fire roasted tomatoes

2 (14 oz) can black beans

1 (7 oz) can diced green chile

Cilantro, scallions, sour cream & hot sauce for garnish


Preheat oven to 400. Line two sheet pans with cooling racks and evenly distribute tortillas. Spray them with oil (cooking spray) and place into preheated oven. Cook 15-20 minutes or until crispy and brown. Meanwhile, add onion to medium size saucepan with some oil. Saute 3-5 mins until translucent. Add to the pan; black beans, salsa verde, green chile, and half of the minced garlic. Turn heat to medium low, cook, stirring occasionally for 10 minutes. Heat a large cast iron skillet to medium with a touch of oil. Add in ground turkey and begin to brown. Add in taco seasoning and tomatoes. Cook until meat is browned and cooked through, then remove to a bowl. Once beans are cooked, use an immersion blender to emulsify the beans and create a creamy like consistency. Begin layering in the skillet used for cooking the meat, starting with enchilada sauce, tortillas, beans, meat and then cheese. Continue layering, finishing with cheese. Place into preheated oven and bake for 25-30 minutes until hot and bubbly. Let sit 5 mins before cutting into. Garnish with cilantro, scallions, sour cream and hot sauce to taste. Enjoy!
